Level 2 Food Hygiene is the standard for anyone preparing or cooking open food. Supervisors and head chefs typically also hold HACCP Level 2 because they're responsible for the food safety management system.

Level 1 Food Hygiene is normally enough for waiters with limited food handling, but Food Allergy Awareness is the more important certificate for any front-of-house role because customers ask waiting staff about allergens directly.
