Natasha's Law Training — UK PPDS & 14 Allergens Online Course

Natasha's Law (the Food Information Amendment) came into force in October 2021 and requires Pre-Packed for Direct Sale (PPDS) food to carry a full ingredients list with allergens emphasised. Sandwich shops, cafés, delicatessens, bakeries and any business producing food on-site and packaging it before sale need their staff trained on PPDS labelling and allergen awareness.

Our Food Allergy Awareness course has a dedicated section on PPDS — what counts as PPDS, what the label must show, how to handle recipe changes and how to document the ingredients each label is based on. It also covers the 14 declarable allergens in detail and the cross-contact controls a kitchen needs to operate in practice.

Front-of-house staff who serve PPDS items and answer customer questions about allergens should hold this certificate. The course is 5 lessons, a 25-question final test (70% pass mark) and the certificate is downloadable as a PDF the moment the test is passed.

Natasha's Law was enacted following the death of Natasha Ednan-Laperouse from an allergic reaction to a baguette that did not carry a full ingredients label. Compliance is checked by environmental health officers during routine inspections and is one of the highest-risk areas for prosecution.

Food businesses producing PPDS food must label it with full ingredients and emphasised allergens, and staff handling allergen enquiries must be able to communicate accurately. Training all relevant staff in allergen awareness is the practical way to meet that obligation.

PPDS is food packaged at the same premises from which it is sold (e.g., sandwiches made and wrapped in a café kitchen). Pre-packaged food made off-site already carries full labelling and is not PPDS.
